Keep in mind you can't run Mac OSX in a VM.

Other than that, either would be fine for an ESXi learning box. Neither one will be fast. Both of those CPU's and platforms pre-date a lot of the hardware acceleration currently available for hypervisors.

what is a good platform for hypervisor usage to run multiple VM?

I can always resell both to get something better. as both are practically brand new and not in use.

Right now? E3 single socket platforms make excellent VM hosts. Extremely power efficient and powerful. Great if you are playing around, or if you have a small farm of hosts for VM's.

If you decide to stick with what you have, use a kill-a-watt or similar product and find out which is more power efficient. That will be your platform of choice.

~$600 for innards, not including storage (ESXi you can boot from thumb and keep VM images on a SAN/NAS solution) and an enclosure/PSU.
