I dont think there is any program available that will allow you to choose only a part of the track to rip.. the quickest way i know (although not exactly easy) would be to rip it as a wav, then edit the wav, and then encode it to mp3... now it sounds like a lot, and maybe there is a program that does it all in 1 easy step, or maybe even a program which does exactly what you want to do, but i've never heard of anything like that.

Cool edit will do this for you. Winamp can make you a wav file of you mp3. The ending that you want removed can simply be "cut" from the wav, and then converted back to a mp3
To expand upon what gammaray said, Cool Edit will actually let you edit the .mp3 file. So therefore, all you need to do is rip the .mp3 and then load it into Cool Edit. There, you will cut out the part you don't want, similar to editing a .wav file. It's very easy and it's the way I do it. Hope this helps!
