There are two choices:
1) Delay the game more while you make the demo.
2) Work on the demo after the game goes gold, so that people get the game at the earliest time possible.

Also, most people are just going to buy the game anyways. I actually doubt that there will be many people who buy the game after playing the demo but wouldn't have before.
