i'd say im not so much into cute anime, princess mononoke was ok and I plan on getting spirited away when it comes to DVD because I hear its very good (although I also heard that about mononoke and I wasn't hugely impressed).
Ive seen an episode of cowboy bepop, I think they show that on toonami or sci fi once in awhile but I can never find the schedule. It looks cool, after EVA I might try to see that entire series. I think they also show outlaw star but I have no idea what thats about, and ive never heard of trigun. I hear macross is one of the best anime series ever made, but isn't there like a million episodes? Not sure I even want to get into that, would cost a fortune to collect it, and I have this feeling that the emphasis is too much on mechs and not enough on plot,storyline,charachter development etc.
I've read article after article about EVA and have seen episodes 1-6. what appeals to me about that is the deep and intricate storyline, the interesting use of relgious and mythological symbolisms and metaphors, the though provoking philosophical ponderings that the subject matter evokes, the attention to developing deep and believable characthers and the sci fi/fantasy setting that serves as EVAs backdrop. This is considered cerebral or intellectual anime, and thats more appealing than fluffy plots. will get it today and probably start watching it.
there's like 36episodes to macross i think. you really dont have to watch macross to see macross plus though. it's a 4 part series, and comes on 2 dvds. also about cute anime, i know it's not everyone's thing, but dont knock it ;) a lot of them tend to have very good stories like CCS, but they dont go all psychological like eva does. (btw, the cross shaped explosions were stupid, but everything else rocked :D)
