I actually did have a thought about this last night.
I know it sounds weird at first but...why don't we just go in the same direction? Right now we have pretty much nothing in any direction (aside from the one portal). The only "goals" of exploring out farther are to find new stuff and open space to build, and for those it doesn't matter which direction you go. In the nether, we can just build a tunnel/hallway that has portal exits every however-far-we-decide-to-space-them. Then when 1.9+ versions come out (pre-release today, supposedly), we will still have plenty of new ungenerated map in the other directions.
p.s. We need to get the original portal moved/protected ASAP. First of all, it was disabled when I went to go there last night, and also minecraft has an issue where it seems to reload the map very slowly when you come back through. This makes you a prime target for creepers hanging around the portal.
p.p.s. I put 6 stacks (apparently 5 or less now) of melon slices in the food chest this morning.
