Are you sure that your computer isn't running the game improperly in some way? With you talking about the overly fast slider and everything it sounds like it might be a problem with your computer, although I could be wrong. Maybe try downloading a gameplay video of it and see if it looks as fast as how yours runs.
Maybe it's because the default resolution is really, really low and can't be changed in the demo, or maybe it's because I played 2003 extensively and, on the whole, it just seems like a faster game this time around.
