I haven't had nearly the amount of mine-spawning problems that you're having. In three or four nights so far, I've had two enemies spawn down there and they were both on the same night. That was night two, which I think was actually the first night that the mine existed (since night one consisted of me actually digging the mine); afterwards, I threw up some more torches and haven't had any problems since (which admittedly could just be due to low sample size of only a few nights).
My mine is literally crawling with guys. They spawn low and go up my stairs into my house. I came in for the night and was greeted by 2 guys waiting in my house (my house has a entrance to the mine) which promptly WTFpwned me because I had 2 hearts. I need to put a door on my mine entrance, but still. In my mine I had 4 creepers, 6 blobs of goo, and 3 skeletons. I cleared them and the sun started to come up. I'm afraid to leave my mine because I don't want to come back and it be full again

I ran into a similiar issue with my base. However, I have a garden with moat installed for wood and food so I just farm that at night as well as a massive lit cavern my house is connected to.
I'm going to work on a trap to farm MOBS and see how that goes. If it all works out well....loot will float into my base through an underground stream.
If we hit that bull's eye, the rest of the dominoes will fall like a house of cards. Checkmate.

Just played through three more nights. No mobs at all in my mine. That first night seems to be the anomaly in my case.

Maybe after the patch it initially filled every area with mobs. I have quite a large dungeon maybe after the initial clearing they won't come back.

Sorry I haven't been around on the server, I've been sick. Sleeping has taken priority over minecraft.
I did briefly log into my SP map yesterday. Found a nest of spiders in my staging area at the bottom of my map. So I guess it really doesn't matter about torches. (I have one torch every 2x2 square block on the floor, and on the ceilings via dropped down blocks, and all along the walls). Despite all of that light, plus several pools of lava under glass providing light, I had spiders and zombies throughout the staging area. Kill 3 zombies and 5 spiders, and logged out. I'll log back in and see if anything has re-spawned sometime soon.

Found random mobs in my mine that was cleared. At night, I'm getting a swarm of guys coming up to my house.
Built my first portal to the slip...and it lands me on a piece of land 20 by 20 located right in the middle of a lava pit 40 blocks high. ***?

Fire traps work the best, imo. Put some around your house instead of the moat and the mobs run into it and die.
If you don't want mobs coming up from mines into your house, get rid of the stairs and put a ladder going all the way down from house to mines.
